I hope everyone had a great weekend! I know I did. I spent Saturday at a 3 year old’s birthday party and then hit the Vermont Brewer’s Festival. Sunday was a LAZY day and I needed it. But now, it’s Monday and LCW from Waking Up Williams is still at it for Momma’s Munchies…and so am I! This week’s recipes is my favorite steak recipe. Mine is something FF & I created after I saw a commercial advertising a bacon crusted steak. Yum!
Bacon Crusted Steak
1 package precooked bacon
Steak (whatever cut & size you want/need)
1 package fresh mushrooms
1 onion (red or white – whatever you choose)
Pepper strips (use fresh or frozen & any combo of colors you enjoy!)
1.) Microwave the bacon according to package instructions (I normally double the time because the bacon should be REALLY crispy!)
2.) Crumble the cooked bacon and roll the steak in it to coat it
3.) Cook the steak to your desired temperature in a skillet.
4.) In another skillet, cook the mushrooms, onions and peppers.
5.) When everything is done, top the steak with the veggies (make a starch for the side if you so choose too!)

Thanks to LCW over at Waking UP Williams, this week’s theme is Pasta! I LOVE pasta – however, my blood sugar does not. So today I’m posting my favorite pasta recipe which isn’t really pasta at all. May I present the creation thought of by FF & I…Pastaless Spaghetti!
1 package Italian sausage (6-8 links. Use Sweet or Hot – or a mixture for more fun!)
1lb ground beef
1 large can mushroom stems & pieces
1 jar pasta sauce (I like Hunt’s No Sugar Added for even LESS carbs!)
Fry the meat in a frying pan until cooked all the way through.
Add the can of mushrooms (be sure to drain them first!)
Mix in the pasta sauce.
Add some parmesan cheese and voila – all of the flavor with non of the carbs!
Happy Monday! Well, not really happy, but it is Monday. So without further ado, let me present you with these weeks Momma’s Munchies recipes. Lindsey over at Waking Up Williams started this a few weeks back & I’m having a blast. This week’s recipe is a favorite 4th of July recipe. I’ll be honest, I didn’t have one. So I set out to find a recipe that sounded yummy – and one that I WILL make for the holiday weekend. It’s sweet AND red, white & blue! I now present a Brownie & Berries Dessert Pizza! Enjoy
|1||box (1 lb 6.5 oz) Betty Crocker® Original Supreme brownie mix|
|Water, vegetable oil and eggs called for on brownie mix box|
|1||package (8 oz) cream cheese, softened|
|2||cups sliced fresh strawberries|
|1||cup fresh blueberries|
|1||cup fresh raspberries|
|1/2||cup apple jelly|
|1.||Heat oven to 350°F (or 325°F for dark or nonstick pan). Grease bottom only of 12-inch pizza pan with cooking spray or shortening.|
|2.||In medium bowl, stir brownie mix, pouch of chocolate syrup, water, oil and eggs until well blended. Spread in pan.|
|3.||Bake 28 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Cool completely, about 1 hour.|
|4.||In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until smooth. Spread mixture evenly over brownie base. Arrange berries over cream cheese mixture. Stir jelly until smooth; brush over berries. Refrigerate about 1 hour or until chilled. Cut into wedges. Store covered in refrigerator.|
